Miso Sesame Chocolate Chip Cookie
Chef Tracy’s signature twist on the classic chocolate chip cookie with miso and sesame! Enjoy 8 cookies ready to eat or take dough home to bake yourself!
ingredients: butter, organic cane sugar, eggs, all purpose flour, baking soda, baking powder, sesame seeds, shiro miso, dark chocolate chips, sea salt
dough yields about 24 cookies.
Baking instructions: Line a baking sheet with parchment or a silpat. Preheat oven to 350f convection. Portion chilled dough into 15g balls, press a hole and add in 3 chocolate chips, and close. Roll the dough between your palms to form a ball then roll the ball in sesame seeds. Gently flatten it to a disc, sprinkle sea salt, and bake 12-15 minutes until golden.
